Super Creamy Sheer Khurma — A Royal Eid Dessert for Special Guests

Ingredients

  • Fine Seviyan (Vermicelli): 100 grams
  • Sugar: 150 grams (adjust to taste)
  • Chuhara (Dried Dates): 10 pieces — halved, deseeded, and thinly sliced
  • Milk: 1.5 liters
  • Saffron (Kesar): a pinch (optional but recommended)
  • Cardamom (Choti Elaichi): 4-5 pods, crushed
  • Desi Ghee: 2 tablespoons
  • Milkmaid (Condensed Milk): 2 tablespoons (optional)
  • Dry Fruits: Cashews, Almonds, Pistachios — thinly sliced
  • Raisins (Kishmish): a small handful
  • Chironji: a small handful

Why Chuhara (Dried Dates) are Essential

Always add chuhara to your Sheer Khurma! These are dried dates that, when cooked in milk, develop a unique flavor that elevates the entire dish. They add both flavor and energy to the sheer — it is the soul of this dessert.

Step 1: Infuse the Milk

Take 1.5 liters of milk in a heavy-bottomed pot. Add a pinch of saffron (optional — skip if unavailable, but it boosts the flavor beautifully). Place on low heat and let it simmer. Add the sliced chuhara to the milk as well.

Step 2: Roast the Dry Fruits

On the other burner, heat 1 tablespoon of desi ghee in a pan. Add all the chopped dry fruits and saute on low heat for just 1-2 minutes — only until they get a light crunch. Do not over-fry. Remove them to a plate.

Step 3: Roast the Seviyan

In the same pan, add 1 tablespoon of desi ghee and lightly roast the fine seviyan until you start getting a light fragrance. That is all you need — just a gentle roast.

Step 4: Build the Flavors

Meanwhile, the milk is thickening on the other burner and the chuhara are plumping up as they cook. Now add sugar to the milk and let it cook further — allow a slight thickness to develop. Add the crushed cardamom pods so their flavor infuses into the milk.

Add 2 tablespoons of Milkmaid (condensed milk) if using. This is optional — skip if you do not have it.

Step 5: Add Dry Fruits and Seviyan

Now add all the roasted dry fruits to the milk and cook for a few more minutes so the flavors meld together.

The milk has now thickened on low heat and absorbed all the flavors — cardamom, dry fruits, and chuhara. Now add the roasted seviyan and cook for another 2-3 minutes on low heat.

Step 6: Rest and Serve

Turn off the flame and let it cool. Do not over-thicken the milk — keep it slightly thin because the seviyan will continue absorbing liquid. As it cools, it will naturally thicken to the perfect consistency.

Let it cool at room temperature for a while, then garnish with more cashews, pistachios, and almonds. You can also refrigerate it — cold Sheer Khurma tastes absolutely wonderful!
