Ingredients
- 500 grams dates (with seeds — remove seeds before using)
- 250 grams cashews
- 250 grams almonds
- 100 grams pumpkin seeds
- 100 grams raisins
- 100 grams coconut flakes
- 50 grams white sesame seeds
- 50 grams poppy seeds (khuskhus)
- 50 grams melon seeds (magaz)
- Desi ghee (for roasting)
Step 1: Prepare the Date Paste
- Remove all seeds from 500 grams of dates.
- Grind the dates in a mixer to make a soft paste.
- If dates are hard, microwave for 10 seconds first, cool slightly, then grind.
- You need a soft, dough-like texture so the ladoos can bind together.
Step 2: Chop the Dry Fruits
- Break almonds into 4–5 pieces using a mortar.
- Cut cashews into 4 pieces each.
Step 3: Roast Each Dry Fruit Separately
- Almonds: Heat 1 tablespoon ghee in a heavy-bottomed pan. Add broken almonds and roast 1–2 minutes. Remove.
- Cashews: Add 1 tablespoon ghee. Roast cashews 1–2 minutes. Remove.
- Raisins: Add 1 teaspoon ghee. Roast lightly. Remove. Always keep flame low.
- Coconut flakes: Add a little ghee. Roast 1–2 minutes. Remove.
- Pumpkin seeds: Add 1 teaspoon ghee. Lightly roast. Remove.
- Melon seeds: Roast in the remaining ghee. Remove.
- White sesame seeds: Add a little ghee. Sauté 1–2 minutes until slightly crunchy.
- Poppy seeds: Add to the same pan with sesame seeds. Roast 1 minute until light golden. Remove.
- Let everything cool slightly.
Step 4: Soften the Dates
- Add the date paste to the pan.
- Flip and warm slightly to soften.
- Create a soft, dough-like texture with the shine of ghee.
- Turn off the flame and let cool slightly — start making ladoos when slightly warm.
Step 5: Mix Everything
- In a large mixing bowl or platter, combine all roasted dry fruits — cashews, almonds, raisins, coconut flakes, pumpkin seeds, melon seeds, sesame seeds, and poppy seeds.
- Mix thoroughly by hand or with a spoon.
- Add the soft date paste to the dry fruit mixture.
- Most important step: Press the dates with your hands into the dry fruits so the moisture mixes well with everything.
- After 5–6 minutes of mixing, the entire mixture will form a dough-like consistency.
- If the mixture feels tight, apply a little ghee to your hands.
Step 6: Shape the Ladoos
- Apply a little desi ghee to your hands.
- Take a small portion of the mixture and give it a round ladoo shape.
- Make them bigger or smaller — completely up to your choice.
- As you make the ladoos, keep placing them on a plate.

- Store in an airtight container.
- Room temperature: Fresh for 2 weeks.
