Aloo Soy Tehri — Ready in 10 Minutes, Full of Protein, One-Pot Recipe

Today, if you’re thinking there’s only potatoes and soy at home with no other vegetable available, don’t skip this recipe. I’m going to show you a potato soy tehri that’s ready in just 10 minutes, full of protein, and so delicious you’ll forget curd, raita, and chutney. Plus, I’ll share an easy way to make soy absolutely soft and tasty. This one-pot recipe is perfect for lunch, dinner, or busy days.

Ingredients

  • 70 grams soy chunks
  • 4 medium potatoes, cut into 4 pieces each
  • ½ kilo rice (normal daily-use rice, or Basmati for extra aroma)
  • 1 tablespoon oil
  • 2 medium onions, sliced
  • 3–4 tablespoons ginger-garlic-green chili paste
  • 1 large tomato, roughly chopped
  • Whole garam masalas: 1 bay leaf, 1 teaspoon cumin seeds, 1 black cardamom, 1 small cinnamon stick, 2–3 cloves
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon garam masala (optional)
  • Water — approximately 100–150 ml
  • Fried onions and fresh coriander for garnish (optional)

Step 1: Soak the Soy Chunks

  1. Put soy chunks in hot water and soak for 5 minutes.
  2. This makes the soy soft and removes its raw smell.
  3. After 5 minutes, squeeze the soy and set aside.

Step 2: Prepare the Rice

  1. Wash rice with 3–4 changes of water.
  2. Soak for 30 minutes.
  3. You can use normal daily-use rice or Basmati long-grain rice for extra aroma and flavor.

Step 3: Build the Flavor Base

  1. Heat 1 tablespoon oil in a pressure cooker.
  2. When light smoke starts to rise, add whole garam masalas — bay leaf, cumin seeds, black cardamom, cinnamon stick, and cloves.
  3. When spices crackle, add 2 sliced medium onions.
  4. Sauté for 2–3 minutes until light golden.

Step 4: Ginger-Garlic Paste

  1. Add 3–4 tablespoons ginger-garlic-green chili paste.
  2. Sauté for 1–2 minutes until the raw smell disappears.

Step 5: Dry Spices

  1. Add 1 teaspoon coriander powder, 1 teaspoon turmeric powder, 1 teaspoon red chili powder, and salt to taste.
  2. Roast the spices for about a minute.

Step 6: Cook the Soy

  1. Add the squeezed soy chunks.
  2. Mix well with the spices — every bite should have full flavor.
  3. When soy is roasted with spices, it absorbs all the flavors deep inside.

Step 7: Add the Potatoes

  1. Add the chopped potatoes (cut into 4 pieces each).
  2. Roast for at least 1 minute so the potatoes also absorb the spices.
  3. Only when both potatoes and soy absorb the spices inside will this tehri be truly flavorful.

Step 8: Tomato & Rice

  1. Add 1 roughly chopped large tomato.
  2. Roast until the tomatoes soften.
  3. Add the soaked rice and stir gently with a spoon so the grains don’t break.

Step 9: Water & Final Seasoning

  1. Add water — approximately 100–150 ml — just enough to submerge the potatoes, soy, and rice.
  2. Check salt here. If it tastes bland, add a little more.
  3. Optional: Add ½ teaspoon garam masala at this stage for extra warmth.

Step 10: Pressure Cook

  1. Keep flame medium and close the cooker’s lid.
  2. Cook until 2–3 whistles.
  3. Turn off the gas and let the tehri rest for 5 minutes — this allows the rice to set perfectly.

Step 11: Garnish & Serve

  1. Open the lid and garnish with fried onions and fresh green coriander.
  2. Serve hot with curd, raita, or salad.
